salmon roe



We can buy salmon roe at the market from autumn to winter..
It is 398-598 yen par 100g. (My place is expensive... May be get more cheeper  in another place)

IKURA NO SHOYU DUKE is very expensive, and at sushi restaurant, ikuya is one of the most expensive dish. And sometimes it is not good taste..(too salty, too sticky)
It is better to make at home.

Too matured roes does not do this well.. because the skin of roe become not soft.


A
soy sauce 50cc
mirin 25cc
sake 25cc

Mix this, and boil once, and cool....

Depend of family, this base is different...
who love sweet,  mirin more.

Peel the salmon roe's outside skin in 30-40degrees c warm  a little salted water.
devide small roe.

And then, mix A and B

We can eat after we keep this one night in the refrigerator.
